Join Jim and Laura in The Kitchen on Wednesday, January 20 from 5:00pm – 7:00pm for a very special cooking class featuring dishes inspired by the culinary culture of Provence in Southern France! Thanks to a mild climate and an unrivaled location, inhabitants of Southern France enjoy a variety of fresh fish, meats, fruits, and vegetables throughout the year, plus the influence of other countries surrounding the Mediterranean Sea, the culinary possibilities in Provence are endless. This class will focus on the following dishes…

• Tapenade – No “aperitif” in Provence-Côte d’Azur is complete without Tapenade, an olive dip made of black olives, capers, anchovies, garlic and olive oil and served with croutons. Numerous variations exist, featuring green olives or sun-dried tomatoes.
• Aioli with Crudite – another Provencal sauce, an egg-based emulsion flavored with garlic and olive oil. It traditionally accompanies boiled vegetables, boiled fish (normally cod) and boiled eggs, and is savored during various summer celebrations. On Cooking Class night, Aioli will be served with Crudité.
• Fish Fillets in a Pastis, Fennell, Leek, and Butter Sauce – No single drink says Provence-Cote d’Azur more than Pastis, an aniseed-flavored liqueur. We had this dish for the first time in La Napoule, and it became the night we fell in love with fish. Can’t wait to share this recipe!
• Hazelnut Chocolate Crepes served with a Petite Glass of Apple Cider – we will drive a few clicks inland to Saint Paul de Vence for crepes and Apple Cider.
